Gluten Free Cutout Sugar Cookies. Not a simple task. The dough is never firm enough to roll, and is usually too oily to successfully cut out a cookie. I’ve used almond flour blends that produce a very yummy cookie, still difficult and you have to pretty much jump through hoops to get a few perfect looking cookies. I recently discovered Bob’s Red Mill 1to1 Gluten Free Baking Flour, and my gluten free baking days have been forever changed. Before this magical flour blend, I had to alter the way I baked goodies for our little Celiac. I became a mad scientist at times, but mostly just mad. Quite honestly, whenever a holiday comes up that calls for cutout cookies (ANY holiday in this house) I panic. I just want to roll out and cut some fun cookies without the hassle. Period. Now I can. The best part, aside from being able to use the rolling pin again, the goodies I’ve baked with this flour taste GOOD, yes they do.

….sort of. Minus the sugar and the gluten. I love baking with bananas, but usually do so with oats. I’m out of oats. And I have two really perfectly ripe bananas. Ah, in comes my beloved coconut flour….and google. Found this recipe http://wellnessmama.com/2637/grain-free-banana-bread-and-muffins/ And totally expected a brick when it was done. I followed the recipe to a T (other than adding cinnamon) and boom…I did NOT have a brick disguised as a loaf of banana bread…what I had, was just banana bread. Moist. Crunchy sweet crust. I slapped some butter on a piece and I was taken back to grandma’s house at thanksgiving 🙂 that made me happy. Very.
This recipe is so easy, you will start to wonder why you’ve never made homemade granola before….like I did after I made this. I only had about a handful of gluten free oats left, ya can’t do much with that…or so I thought. Props to Lauren’s Latest for her recipe. I always love her recipes, and they are very easily converted to gluten free. Actually, I convert a lot of her recipes to gluten free. I used hers as a guide for my granola….my recipe is below…Simply because I didn’t have shredded coconut or maple syrup 😉 I also cut her recipe down to 1 cup of oats….and kinda guessed on the rest…
Homemade Gluten Free Chocolate Granola
1 cup gluten free quick oats
2 tbsp butter
2 tbsp cocoa powder
1 tbsp honey
1/4 cup chopped almonds
Melt butter, add cocoa powder and honey. Stir. Add this to the oats and almonds. Stir. Spread on a sil-pad on a baking sheet. 200 for an hour. Easy. Too easy. I usually add granola to plain greek yogurt with a drizzzzle of honey. That’s breakfast. I will never buy granola. Ever. .

How many times have you seen a yummy food pict, just to click on the link and see a laundry list of ingredients, or items you’ve never heard of, complicated directions, and worse yet…you are looking at a gluten free recipe…If I get passed the 20th ingredient, I shut down. As this blog evolves, it’s clear that I have what I call, Recipe Attention Deficit Disorder, or RADD. Yah, that’s it, these recipes are RADD!
Speaking of ingredients you’ve never heard of: Chia Seeds. (who has an image of a chia pet in their head right now?) Read all about the incredible health benefits of chia seeds here. You can take them out of the recipe, but after reading about chia seeds, why would you want to?!
I want to talk about natural peanut butter for a minute. When I say natural, I mean it has one ingredient, peanuts. If you have “regular” peanut butter, you can use that…these will just be a little sweeter.
Gluten Free Banana Bread Bites
1 ripe banana
1 tbsp natural peanut butter
1 tbsp chia seeds
1 tsp cinnamon
1 cup gluten free quick oats
Mush banana in a bowl, add the other ingredients, stir. lump in a ball, plop on the pan. easy. always easy. Let them cool before you eat them, you WILL burn your tongue. 🙂
15 minutes @ 350 makes about 10
note: I always use a sil-pad mat on my pans. always. nothing sticks to them, ever!
Additional thoughts: These are begging for some chopped walnuts, I would have added them if I had any. I would love to make a carrot cake or zucchini bread version of these. Chocolate chips or raisins would be swell as well. Dehydrated apples or cherries with dark chocolate chips….and you thought RADD wasn’t a real disorder 🙂
In our home, we look at a traditional gluten filled recipe and figure out how it can be made gluten free. That’s always our mission. I’ve learned over the years that it’s easier than one might think. trust me.
So let’s talk about these pancakes. Fun breakfast food for kids of all ages….pancakes! Gluten free pancakes haven’t really ever been on our menu, cuz…have you ever TRIED gluten free pancakes?! Have you ever tried to MAKE them?! Yes, there are many different kinds of gluten free pancake mixes on the market…blah blah blah. Pancakes should be made from scratch. Period. I’ve made pancakes with coconut flour in the past, super yummy, but these oat flour pancakes seem to leave the plate quicker than coconut flour pancakes 🙂 They are ‘Button Approved’ and they are EASY.
Oat Flour Pancakes
1 cup gluten free oat flour
1 tbsp oil (I use Coconut oil, melted)
1 tsp. baking powder
1 generous tbsp honey (or sugar)
I use Bob’s Red Mill Gluten Free Quick Oats and whip them through the food processor for a minute or two…tada, oat flour. Then I add the baking powder, eggs and melted coconut oil. I used honey in this recipe for the first time today…mainly because I wanted to eat some of these, and I don’t (try not to) eat sugar. You can certainly use sugar, they will taste the same.
Instructions: hot pan, butter, spatula, syrup, fork and hungry kids. done.
In order to tell you about this cookie, I first need to tell you about the best grocery store (calling it a grocery store doesn’t exactly do it justice) in the world. Yes, the world. Wegmans. If you are from these parts…or even the north east part of this country, I don’t have to explain myself. If you’re not from these parts, my sympathies.
When our (now 5) daughter was first diagnosed with Celiac Disease, having a Wegmans 5 minutes away was a godsend. They have their own products that are clearly labeled gluten free, which is extremely helpful. They also have an entire section devoted to gluten free and organic food. (Nature’s Marketplace). They now also have their own cake mixes, pastas (hands down the best gluten free pasta I’ve tried), brownie mixes, and chocolate chip cookie mixes…just to name a few. This perfect cookie in the picture was made from a Wegmans chocolate chip cookie mix. 90% of what I bake gluten free, is from scratch, but I leave a few things up to the experts.
So, like me…if you are looking for a very good chocolate chip cookie, that just happens to be gluten free…and you don’t want to reinvent the wheel…pick up a box of these. Our store has them for $3.49.
