….sort of. Minus the sugar and the gluten. I love baking with bananas, but usually do so with oats. I’m out of oats. And I have two really perfectly ripe bananas. Ah, in comes my beloved coconut flour….and google. Found this recipe And totally expected a brick when it was done. I followed the recipe to a T (other than adding cinnamon) and boom…I did NOT have a brick disguised as a loaf of banana bread…what I had, was just banana bread. Moist. Crunchy sweet crust. I slapped some butter on a piece and I was taken back to grandma’s house at thanksgiving 🙂 that made me happy. Very.
