Gluten free brownies are easy. You don’t need any fancy complicated gluten free flours, or mixes. You don’t even need a degree in baking. Is there a degree in baking? I asked our daughter if she wanted brownies today. “No, I want cookies.” Ok, but I wanted brownies. Bam, brownie cookies. We both win.
Gluten Free Brownie Cookies
1 cup sugar
3/4 cup cocoa powder (I used Hershey’s)
3 tbsp butter (softened)
1 tsp baking powder
Take a spoon, roll a ball…smush. That’s how I make most of my cookies. I keep it simple.

Gluten free pizza. What’s the first thing that comes to mind? Blech. Right. WRONGO! Chebe Garlic Onion Breadstick Mix is our go-to pizza mix. It’s not only gluten free, but it’s grain free. We’ve tried others. Other mixes, other frozen pizzas. I’ve made almond flour pizza. Nope. Nothing puts a smile on our little Celiac’s face than this pizza! Bonus: everyone else in the house that isn’t gluten free, loves it as well. Happy Valentine’s Day!
Why am I starting a gluten free food blog when there are so many out there? Good question. Why now? Another good question. I love to create food that our Button can eat. And I like to take pictures of it. Button’s 5 and has celiac disease, she HAS to eat gluten free. I have found a gazillion gluten free recipes and want to share her favorites…my favorites. They are stupid easy, because that’s the only way I cook. I don’t have time for complicated recipes. Enjoy!
